What AYCE actually demands of a POS.

All-you-can-eat isn't just "menu without prices". It's a service model with rules: how many dishes per person, how long they wait, what gets charged separately, what happens if food is left over. Mesero implements those rules natively.

Rounds with cooldown

Each table orders in batches. When they submit a round, the cooldown timer starts (8 min default, configurable) until they can order again. Prevents flood orders that overwhelm the kitchen.

  • Cooldown starts on submit OR on delivery (you choose)
  • Skip the wait from POS with one tap
  • Phone notification when the next round unlocks
  • Optional total sitting limit (e.g. 90 min)

Per-person or per-table cap

Configure "10 dishes per person, per round" and the cap auto-adjusts to the actual party size. Table of 4? Cap is 40. Table of 6? Cap is 60. Set it when the table starts the buffet.

Premium plates

Wagyu, toro, oyster: mark a dish as "premium" and apply the rules your menu needs. Per-round cap (max 2 wagyu per round per table), per-unit surcharge, or daily quota that resets at midnight.

Connected to the rest

The buffet lives inside the rest of the system.

It's not a separate module. Reuses the same POS menu, feeds the same kitchen, shares the same customer record and gets paid from the same checkout flow. The difference is buffet rules layered on top of what you already have.

Kitchen knows which round it is

  • Every kitchen ticket carries R1 / R2 / R3 visibly
  • The table's allergy note appears on every ticket — no waiter app needed
  • When kitchen marks "delivered" on KDS, the customer's cooldown auto-arms
  • Kitchen sees waste (optional photo from staff phone) when the table leaves food

Floor maintains a single bill

  • Multiple phones can scan the table QR — all orders go to one ticket
  • Cover charges, premium surcharges and drinks accumulate on the same bill
  • Adjust diners mid-service (someone joins, someone leaves) — the cover recalculates automatically
  • Checkout is the standard flow — cash, card, split — no buffet-specific UX
  • Buffet reports (cover vs extras revenue, rotation, top items, average time) in admin

AYCE doesn't have one model. Mesero supports both common patterns.

Flat rate per person

Classic AYCE: fixed cover × diners. Buffet dishes priced at €0. Drinks and premium plates can carry surcharges. Predictable cheque for the customer, predictable revenue per cover for you.

Per-dish with cap

Customer pays each dish at its menu price, but the per-round cap stops the kitchen from getting overrun. Useful for "set price but ordered" concepts, grills with many cuts, or wide-menu Asian.

Where it fits best

Sushi AYCE, hot-pot, Asian, grill.

Buffet is a service mechanic, not a cuisine type. It works in any restaurant where the operation is "the customer orders until full, within rules".

Ideal for

  • Sushi AYCE — premium plates with daily caps (wagyu, toro, uni)
  • Hot-pot, shabu-shabu — round cooldowns let the kitchen breathe
  • Asian AYCE — Chinese, Japanese, Korean, Thai with broad menus
  • Meat grill — premium cuts with surcharge, cooldown between rounds
  • Tapas / mezze — if you want "tapas all-you-can-eat" service

What it doesn't do

  • Doesn't replace the floor — waiters still bring dishes
  • Not a self-service buffet (customer fills their own plate). That's a counter, not an operation
  • Doesn't force a single kitchen. Tickets follow your normal KDS with R1/R2/R3 added
  • Doesn't block à la carte — the same restaurant can run buffet tables and regular menu tables in parallel

Small decisions that change the day-to-day.

Things that surface only after a buffet has 50 real services on it — invisible in a 5-minute demo, obvious to any waiter at end of shift.

Last-call warning

Prominent red banner on the customer's phone when 10 minutes remain before the time limit. Pushes the final round without a waiter walking the floor.

Call waiter

🔔 button on the customer's phone — for wasabi, water, chopsticks. The table flashes on the POS floor plan. No round needed.

Waste fee

Disclosed on the customer welcome screen. If dishes are left uneaten, staff log them from POS or the Mesero Comandas mobile app (with optional photo) and the per-unit fee auto-adds to the bill.

Live order status

Phone shows the round in progress: 🍳 Preparing → 🍱 Ready → 🚚 On the way. Calms the wait without staff repeating "it's coming".

Kids and groups

Kids free or percentage of the cover. Special banner for large parties — useful for birthdays, company lunches.

Five languages

Customer menu in Spanish, English, Catalan, Japanese and Chinese. Useful in tourist areas — Barcelona, central Madrid, the coast.
